If I was to use Kinesis Pay, do I also need to list my product prices in units of KAU?

There is no need to list product prices in units of KAU. If your shop is in USD (or CAD, Euros, Pounds), you would continue listing the products in your regular currency.
When a customer wishes to pay with Kinesis Pay Gold (KAU) or Kinesis Silver (KAG), they simply add the product to their cart and during checkout Kinesis Pay converts the sale to KAU or KAG at the current market price. So, for example, a USD100 sale would convert to the equivalent amount of KAU (Gold). Today, the price of Gold is USD 87.22 per gram, so for a $100 sale, the merchant would receive 100/87.22 = 1.146526 grams of Gold in the form of 1.146526 KAU.
The amount of Gold instantly deposited to the merchants Kinesis Money account would be 1.141366 KAU after deducting the 0.45% processing fee.
